This is Val d'Isère's only star, and it is earned: the room at Les Barmes is a timber roof structure set on columns of stone quarried in the valley, open onto the resort. Chef Antoine Gras cooks the Alps without folklore: held sauces, local produce, a generosity that is not an empty word.
