In the Valais, a carnotzet is the small room you go down to for cheese and wine among your own: Les Fermes de Marie made it their second table. Fondues, raclettes, cheese specialities, in a deliberately small room. This is dinner for the evenings you want to be fifteen around a caquelon rather than two in a dining room. Book early, there are few covers.
