You know what you are coming to Nobu for, and that is quite all right: the black cod marinated seventy-two hours in yuzu miso, the yellowtail jalapeño, the rolls. What sets the Monaco room apart is its terrace, it runs the full length of the restaurant at the Fairmont, facing the Mediterranean and the Grand Prix hairpin. Dinner only. I give it to clients who land late and want a sure thing on the first night, before they explore.
Elegant but relaxed. You dine well dressed without stiffness, and as the evening runs on, shoes you can stand up in.
