On the eighth floor of the Hôtel de Paris, Le Grill has one argument nobody can copy: its roof opens. A summer dinner that starts indoors and ends under the stars, the Rock on one side and the sea on the other, I have watched guests fall silent the moment the roof slides back. The cooking stays deliberately legible: whole fish, grilled cuts, soufflé for dessert. One star, and no stiffness at all. Ask for a sea-side table and tell me the date early: it is the most contested in the house.
We advise a jacket for men, no tie needed. Nothing is imposed, but it is a room where dressing up is part of the pleasure.
