Gaia Monte-Carlo

Gaia is the Greek taverna as you imagine it after three glasses of good assyrtiko: white tablecloths, whole fish, mezze in abundance, and a room whose temperature climbs through service. Chef Izu Ani built the formula in Dubai before installing it beneath the Hôtel de Paris. You go to eat simply and well (grilled octopus, taramasalata, lamb) and for the mood, which tips towards a club late on. I recommend it for a group rather than a tête-à-tête.
Elegant but relaxed. You dine well dressed without stiffness, and as the evening runs on, shoes you can stand up in.
